Creamy Tomato Basil Soup

Create your own heart-warming version of tomato soup that costs less than the can you'd buy at the store. In this recipe, tomato juice is mixed with garlic then turned into a velvety concoction by stirring in the coconut milk. Ummm Good!

Ingredients

3 tablespoons butter

1 clove garlic, chopped

2 tablespoons arrowroot

1 quart tomato juice

1 can full fat coconut milk room temperature

1 drop Basil Essential Oil

Salt and pepper

Preparation

Warm oil in a large saucepan over medium-high heat. Add garlic and cook until slightly softened and fragrant, about 1 minute. Stir in arrowroot to blend, about 1-2 minutes.

Add tomato juice, increase heat to high and bring to a boil. Stir or whisk constantly until slightly thickened, about 3 minutes.

Stir in coconut milk and cook over low heat for 3 to 5 minutes, until heated through. Do not boil. Add Basil Essential Oil. Stir. Season with salt and pepper. Serve hot in warmed cups.
