Yummy Sweet Potato Chips

I love sweet potatoes! Baked, casserole, and even chips! This recipe is sure to please everyone around your table! As I made them, my children gladly snacked and snacked some more! I had to make another batch for me and the hubby!
Another point I'd like to make, these store fine but they usually won't last that long!!
Ingredients
3 small sweet potatoes (about 2 pounds)
1 1/2 tablespoons garlic-flavored olive oil
1/2 teaspoon dry mustard
1/2 teaspoon salt
Preparation
Preheat oven to 450°.
Peel sweet potatoes; line each potato into 1/4 inch slices. You may use a veggie slicer to do this, if you have one. In a large bowl, combine sweet potatoes and remaining ingredients; toss well to coat.

Arrange potatoes in a single layer on a baking sheet. I like to use parchment paper. Bake potatoes at 450° for 30 minutes or until soft and lightly browned, turning wedges after the first 15 minutes. Serve immediately.
Can't wait until planting.....here in WV our planting season is late. But I'm ready get my plants in the dirt!!
